Secrets of the traditional recipes
The chef will show you the ultimate way to make homemade ravioli. Between kneading and resting the dough, rolling the long silky sheets of pasta, assembling the layers, encasing the filling, sealing, cutting and serving, these heavenly parcels of joy are worth every step. A true labor of love, but with the small bites that are offered during the process, time will fly while you are having fun with your friends and family. Is anyone trying to master the Gnocchi alla Sorrentina recipe, with a fresh tomato sauce and topped with Treccia cheese and some fresh basil? While learning the techniques and secrets of the traditional recipes, the staff will make sure you will not miss any of the tasting samples of their own high quality wines.

The limoncello making process
As the famous Limoncello di Capri will be on the menu later, you will be introduced to the limoncello making process. Only certified local heirloom lemons are used. This variety of lemon is large, shaped like an oval, has an bright yellow peel, and is particularly aromatic.
The fruit is prized for its juicy, acidic quality. The trees that produce this lemon are wrapped in plastic or cotton sheeting to protect the fruit from cold temperatures and rain, allowing it to mature later in the season for a more intense flavor. The lemons are harvested from February until October after being cultivated according to traditional farming techniques.
Did you know that only the peel of the lemon is used to produce limoncello? Just the first one millimeter layer of yellow zest from the fruit is used, thus leaving the bitter white inner pith behind. The zest is where the fruit´s limonene is located, a pungent essential oil that gives limoncello its famous scent. The lemon zest is left to macerate in pure 95% alcohol for about a week, after which the infusion is filtered and the zest, which has in the meantime lost all its aroma, is discarded. The infusion is mixed with cold purified water, and a sugar solution is added.
After this final step, which takes about an hour, the limoncello is ready and is currently being chilled for you to enjoy later!
